Does any one know any good vegetarian recipes, preferable able to go in a slow cooker but not essential? Need a tasty recipe that can be quite easy to make and I don't know any really good recipes.

I like to make a Ratatouille in my slow cooker... Eat it as that one evening with garlic bread...and liquidise the remainder to have with pasta the following. [freezes well too] Will tell you what I put in if your interested.

Yes please! That sounds nice. Ingredients: 1 large red onion cut into large chunks. 1 large courgette cut into large chunks 1 crushed clove of garlic [or 2 if you like garlic ] 1 red pepper and 1 green pepper again roughly cut into chunks 1 large tin of whole plum tomatoes 1 dessert spoon of red pesto sauce salt and pepper to taste.
Heat up the slow cooker for a 10 Min's before adding ingredients. heat up the tinned toms in pan. Basically put everything in the cooker . stir to coat all with the tomatoes juice and forget about it until 8+ hours later.
Delicious on its own or with garlic bread and any left can be frozen of liquidised to make a brilliant pasta sauce.

Thanks alot, that sounds perfect! My daughter and her friends are fans of the TV program come dine with me so they've been taking turns in doing a three course meal at each others houses. Two of them are vegetarians and I've never done a veggie meal before. Daughter wants a main course that is tasty and simple to do and serve. This fits the bill just fine.

made this last week for veggie friends really good even my son ate it and he does'nt like veg.
