For those who like really good, cruncy muesli this is a real treat.
8oz good quality porridge oats 2oz mixed seeds (I use 1oz pumpkin and 1oz sunflower) 2oz dessicated coconut 6oz mixed nuts - chopped chunkily if whole (brazils, almonds, hazelnuts, cashews, pecans) 1 tsp ground cinnamon 6oz mixed dried fruit (not the sort with peel - I use cranberries and seedless raisins, but could also use chopped dates or apricots or dried cherries would be lovely if expensive) 3 tblsp maple syrup 2 tblsp light, good quality oil like sunflower or olive (not extra virgin though as the flavour is too strong)
Mix the oats, nuts, seeds, cinnamon and coconut in a big bowl. Add the maple syrup and oil and stir around really well until it's distributed through the dry ingredients. Pour the mixture onto a large baking tray or shallow tin. Heat oven to 180oC and roast the mixture for 25 mins - removing from the oven at 5min intervals to stir the mixture around. When it's lovely and toasted (but not too brown) remove from the oven, stir in the dried fruit and leave to cool.
Store in an airtight container. Eat with really cold milk and yoghurt.
