For those of you who love fish! Tilapia is a giant cichlid and one fish is a good meal for one - there are a lot of bones but a fair amount of flesh too. It's not too expensive, one fish cost me about £2.50.
1 tsp garlic granules 1 tsp onion salt 1 tsp ground cumin 1 lime
Wash and dry the fish, season inside with salt and pepper then brush both sides with oil.
Mix the spices together and cover both sides of the fish. Make three slits in the fish and place a slice of lime in each. Place fish on oiled baking tray.
Place on high shelf in oven and cook for 15-20 minutes on Gas mark 6, electric 200.
An aioli mayonnaise goes nicely with it (I kind of made up my own!)
2-3 tbsps mayonnaise 2 tbsps whole grain/dijon mustard lemon juice to taste 3-6 crushed garlic cloves (depending on how strong you want it) 1 tsp dried tarragon to add some spice: 1 tsp chilli powder
You can alter ingredients according to your taste (I always do!)
Mix all ingredients well
Serve fish with a mixed salad or vegetables and the aioli sauce.
