Serves 6
2 lb herby sausages - skinned 2 finely chopped onions 2 x 1kg marrows 4 tomatoes, sliced 8 oz grated cheese - gruyere or cheddar salt and pepper
Peel the marrows and slice into 2 inch rings (remove pips Slice tomatoes Mix sausage meat with onions, salt and pepper well, roll into large golf ball shapes. Lay marrow slices onto baking dish(es) - lightly geased.
Put a slice or 2 of tomato on the marrow ring and squish in the sausage balls.
At this point it says to bake with the cheese on top for 1/2 an hour at 200, gas 6, but I find it better to cover with foil (without the cheese) for about 20 minutes, then remove the foil, top with the cheese and return to the oven for another 20-30 minutes, watching so not to burn.
Serve with crusty bread and green salad.
Tasty - and gets rid of those marrows...
