I love warm rasps with mascarpone , sorry it's not a recipe ;D All I can think of is jam, oh what about raspberry gin/vodka

I freeze them and then use them in fruit jelly and serve with ice cream! Also use them in trifles.
Or buzz them up and serve as a sauce with ice cream.

They freeze well Gill. I use to open freeze them in batches on baking trays and then put into bags. The advantage of open freezing is that they stay more or less separate and don't freeze into solid lumps.
If you've loads and loads what about making jam. And if the pips bug you, you could make raspberry jelly, which is delicious.
Alternatively - freeze them, give them to me next time I visit and I'll make the jam and share it with you LOL

Oh oh oh! Just remembered.....
Raspberry vodka, made exactly like sloe gin (except using rasps and vodka obviously LOL). Then when you drain the liquor off, keep the rasps and dip each one in melted chocolate. Leave to cool and you've got the scrummiest choccies you've ever tasted!

Well I made a berry trifle which was a big success - I had friends round on Sunday and one of them is 76. She said it was the best trifle she's ever had in her life, so that was quite an accolade ;D ;D Thanks for all the interesting recipes though, and useful to know they freeze well Sue!
