I'm not too sure this is a starter or a main course really, but ever on the search for good wholesome and warming soups to take to work or have in the fridge to help yourself to when hunger niggles, I have come up with this one.....
Two med onions Approximately half a decent sized butternut squash
Any quantity or combination of the following: Carrots Courgettes Parsnips You can basically add any vegetable you want, cabbage, cauliflower, peas, spinach
Then add 1/2tsp mixed spice 1/2tsp chopped garlic (optional) salt and pepper to taste Water to cover and simmer in Good vegetable stock cube
Finally, the last ingredient is a tin of drained chick peas
Cook it all together until tender (butternut will take the longest and it doesn't matter if everything else is more than soft), add more stock or water to thin if you want and after cooling a while so you don't scald yourself, blend it.
Its fabulous and filling and the best thing is, there is nothing in it which is not allowed if you are following SW.

I tried this last week - well, nearly tried it, I didn't have any butternut squash, so substituted a large sweet potato - and it was absolutely delicious! I was a bit unsure of the mixed spice, but it was just right, gave the soup a lovely warm flavour without overpowering the other tastes or being too spicy. Just right for a cold, miserable evening on one of our 'fasting' days, highly recommended. Thanks Penny
