for lunch, sandwiches or ?
We usually have sandwiches or maybe soup, but if we are going down the free range route packet cold meat is out, well chicken and prob ham is, also trying to keep the fat as low as poss is difficult.
So I'm open to suggestions for sandwich fillings that are low fat and veggie but not salad( not in this weather)

Erm........ Im a rubbish sandwich maker, I always seem to do cheese and ham but I can think of lots of nice fillings. What about Homous, grated carrot and rocket on rye bread. Good old egg mayo (low fat mayo) brie and grapes, prawns are low fat too.

Use left over bits of chicken from a free range roast, make sure you use your hands to get all of the meat off the carcass if you don't do this already, lots of people are surprised that there is often enough left over from a roast for 4, for another meal such as a home made curry or risotto.
Cut into little 'sandwich sized' pieces. Mix with low fat creme fraiche or yoghurt with crushed and very finely chopped 1 or 2 garlic cloves of garlic depending on your taste, add a couple of dashes of lemon juice and season. Sooooo good on wholemeal bread! It will keep in the fridge for a couple of days too of course.

Although of course that isnt veggie. You could roast veg such as peppers courgettes and aubergines and mix with the yoghurt/creme fraiche too, thats also really good!

I'm rubbish at sandwiches. It seems you either have a talent for good sarnies or you don't! I usually have soup and bread - boring or what?!

Do you have a good farm shop near you Zelda? What about getting a piece of gammon and cooking it yourself. You can slice it up and freeze it in packs - it is expensive to start with, but in the end is really cost-effective.
I also make burgers with home-minced meat and freeze them. Usually farm beef, but lamb and chopped mint is nice too....add plenty of fresh herbs and seasoning (and a squirt of organic tomato sauce! LOL). I cook them in my health grill thing and put in a bun - makes a lovely quick lunch. You've just got to remember to take them out of the freezer LOL.
Neither of those are veggie though.....
Veg chopped small and roasted with a little olive oil is delicious with low fat cream cheese. A bit of pineapple and cream cheese is nice too if you enjoy the sweet/sour thing.
Just modifying to say that wraps make a great alternative to bread.
