COURGETTE AND STILTON SOUP
ƒx Chop a medium onion and cook gently in one tablespoon of oil until softened. ƒx Add 1.5 litres of vegetable stock and one medium potato, peeled and cut into small cubes. ƒx Simmer for 20 minutes or until the potato is almost cooked. ƒx Add 3 medium courgettes, grated, and cook for a further 10 minutes. ƒx Blend until smooth with 8 oz. mature Stilton or other blue cheese. ƒx Return to pan and season to taste.

This sounds lovely, I love a good soup and crusty bread especially as the weathers turned chilly.

UUUMMMM, it does sound good, i have to admit i love a good soup and crusty bread this time of year as well, UUUUMMMM, nothing can beat it, UUUUMM.

this too is a great recipe. Ive made it before, it also works well with any green veg. I use sprouts, broccoli or cabbage, infact any greens that need using up.

Sounds lovely - I'll give that a go too - but will try reducing the quantities a bit for one...
