QUICK TOMATO SOUP
Place one carton of passata in a pan with an equal quantity of water, one stock cube and a peeled clove of garlic. Bring to the boil and simmer gently for five minutes. Chop two spring onions and fry them gently in one teaspoon of oil. Add the spring onions to the soup. Remove the garlic clove and season to taste with fresh basil, dried herbs, chilli powder, salt or freshly ground black pepper.
