Covent Garden Soup Company make this soup, which is lovely, but I couldn't find a recipe so I made it up. The quantities aren't exact, though......
You don't have to roast the squash, but it does make for a lovely flavour in the soup. I roasted loads of squash when the oven was on - ate some with my meal and kept the rest to make the soup.
I also used "Lazy Ginger" from a jar because I didn't have any fresh root ginger in.
Peel and cube one small butternut squash and put pieces in a bowl. Add some salt, pepper and olive oil (not too much - just enough to coat the squash) and stir it around until the squash is coated.
Put on a baking sheet and roast in a hot over for 20 mins, or until golden and tender.
Peel and roughly chop one medium onion and one medium sized carrot. Sweat the carrot and onion in a pan with 1oz of butter or 1 tblsp olive oil. Add the cubed squash (sweat it with the carrot and onion if it's raw - no need to do this if it's already been roasted).
Chop three or four dried apricots and add to the veg in the pan.
Add 1 level tsp of lazy ginger. If you use fresh ginger then probably a 2cm square, peeled and chopped will do.
Add enough chicken or veg stock to cover the vegetables in the pan. Bring to the boil and simmer until the carrots are tender.
Liquidise until very smooth and velvety - add more boiling water if you want a runnier soup (this recipe makes quite a thick soup) and check the seasoning.
Just before serving stir in a couple of tblsp cream (optional - but yummy).
Serve with warm crusty bread.........Mmmmm mmmmmmm!!

that sounds good! I will try that. Must admit I have only ever made Butternut Squash, chilli and coconut soup with these squashes, but I can see I will have to be more adventurous.

Mmm thanks Sue Im going to try this.........I will have to buy another squash though, the left overs from last night have now been eaten!..........cold!...........by myself LOL!

I tried this recipe last night! I now have a slow cooker. I followed the recipe, then instead of boiling it together slung it all into the slow cooker for 9 hours while I was at work. Came home, purieed it in the blender.
SUPERB! Its the best soup Ive ever made.

Did you use fresh ginger, or the jar stuff?

Hi Sue, I always use fresh ginger. I buy it weekly as I use the stuff in almost everything from salads to rice, to sauces and soups.
IT was a very popular soup, everyone loved it. Certianly gonna be done again. My kids had second helpings too. Its full of vitamins this is... Orange veg have large amounts of flavornoids in them as well as the E vitamin group.
The colour was lovely and rich as well....

Just made this, absolutely gorgeous! I roasted the butternut in the wee hours as OH started work really early then bunged it in the slow cooker. It is delicious.

Have now made this recipe loads of times and everyone loves it and always asks where I got the recipe from, they are amazed when I tell them it's from a horse site. Thanks suziep.

Well Iv made this soup today! it is gorgeous Sue, thanks. You know when I said I had bought 3 squashes? well I didnt end up making the soup lol, just got round to it after how long? Im taking it to work for my dinner tomorrow.

I made this yesterday with a couple of changes, I only had half a squash so added a couple of small tatties, no apricots used some dried apple instead.
It was delicious will def make it again
