Carmalise onions!
I want a good tastly proper french onion soup recipe. Would you believe it, one arrived in this months GOOD FOOD magazine... BUT...
It assumes you buy in caramalised onions in a jar!
Well, Im not interested in jars! I want to do the whole thing myself. But Ive not ever made french onion soup, and Ive never done caramalised onions.
Anyone out there able to help??

Oh yes - I've done this and made French Onion Soup - it's gorgeous.... Here's the recipe I use (serves 6)
1.5lb onions 2 tblsp olive oil 2oz butter 2 cloves garlic, crushed 0.5 tsp granulated sugar 2 pints beef stock 10 fl oz dry white wine 2 tblsp cognac salt and ground black pepper
Slice onions thinly melt oil and butter together over high heat when very hot add garlic, onions and sugar and cook, turning onions from time to time until the edges of the onions have gone brown. turn heat down to low and leave the onions to keep cooking slowly for about 30 mins.
The bottom of the pan will be a bit sticky and brown - so add the stock and white wine to this same pan and used all the yummy flavours. Season and stir, scraping the yummyness off the bottom of the pan with a wooden spoon. Simmer gently for an hour...
Stir in the brandy and serve with great big croutons with melted Gruyere on top.
