Feeling rather down this evening, I decided to make a souffle - I really like souffle and haven't ever made one before. I did a plain cheese one - and it was fab.
Does anyone have other good souffle recipes I can try?

This I saw recently on Ready Steady Cook. Im not plagerising it, because its all from my head! lol
Its a chocolate souffle! Rosie wants to try this.
OK, first of all you make some pancakes. You know the English ones. Take about a pint of milk, sling it into ya blender Add to this 4 eggs, blend. Add to this self raising flour until its thick enough to become a batter. In a hot flattish frying pan, add some oil (not too much) let it get smoky hot and pour in some batter, roll it around the frying pan evenly to create a nice pancake. Wait until bubbles raise and start to pop. With a plastic spatula, scoop and toss the pancake onto its other side. Slip the pancake out and make a shed load more. If you make too many of these, you can freeze them. Remember to separate the pancakes with grease proof paper so they split when you defrost them.
In a metal bowl, whip up 4 egg whites until they are stiff and form peaks. Melt about 6 oz dark chocolate in a bain marie In a separate bowl beat the 4 egg yolks, add about 2oz caster sugar to this. Blend into the cooled melted chocolate and gently fold in the egg whites.
Now spread a portion of this mixture onto the pancake.
Fold the pancake into half, so the chocolate mixture is folded inside the pancake.
Sprinkle on some caster sugar and
Bake in a hot oven for about 5 - 8 minutes.
Scoop out of the oven and eat with whipped cream or icecream
Sorry it didnt include cheese or anything sue, but hopefully the chocolate will lift your spirit. OH, talking of such, this is nice i expect with an orange type liqure on it... or brandy!

Ooooooh - that sounds YUMMY. It would serve two purposes wouldn't it - comfort food and choccy fix in one go.
I'm OK, Mary - just struggling with depression at the mo......it's a long story! It'll pass......
