Went out for lunch the other day and had parsnip and apple soup, so I tried to create my own. Four good sized parsnips peeled and chopped One cooking apple peeled and chopped One onion Olive oil Salt & pepper Teaspoon Corriander Veg or Chicken ctock.
Parboil the parsnips, drain. add apple and toss in olive oil, place on a baking tray and season with S&p. Roast in a hot oven til golden (you could miss this stage out but I like the roasty taste and it smells yummy). Sweat the onion, put the lot in a casserole and cover with chicken or veg stock, add the corriander. cook slowly. Blend til smooth, adding more liquid if neccessary. Can add cream or yoghurt for a richer creamier taste if you like, serve with crusty bread.
Not quit the same as I had at the cafe but tasty all the same.

I like the sound of that soup. Might give it a go because I'm getting plenty of parsnips in my organic box right now.
