The skin would soften if you've cooked it long enough. Shouldn't be chewy at all. My favorite way is just like Pam's, although I tend to halve mine, scoop the seeds out, place a pat of butter in the hollow, throw into the oven at 350* and then forget about it for a good 45 minutes. Good thing my buffalo dinner's about done, these recipes sound tempting!!

Also popped in a roasting tray with, onions, garlic, carrots swede, parsnips and anything else you fancy. Small amount of olive oil and leave for a good hour and half.

Once you're sick of eating them : Hollowed out with a candle inside, they make an interesting "ghost-shaped" alternative to a pumpkin for Halloween
