Being inundated with eggs, I am always on the lookout for different recipes. Tried this one the other day - and you can cook it in the microwave, which is brilliant as it is so quick!
4 slices bread butter for on bread l large banana sliced 2 eggs 85g soft brown sugar plus 1tbsp extra pinch cinnamon 450ml milk 1 tbsp cornflour
Toast bread. Spread with butter, cut into 6 pieces. Put butter side up in a microwaveable dish. Add banana
Beat eggs, sugar cinnamon and milk. In a separate bowl mix cornflour with a little of the milk until smooth. Add this to the egg mix. Sprinkle this with the extra sugar.
Cook 8-10 minutes in microwave. Let stand for 5 minutes.
can cook in normal oven, just don't toast bread. 180 or fan 160, gas 4 for 30-40 minutes until set.
