Now, I'm a disastrous newbie cook, but today, I made my first ever omelette, and it was a success! No need for second attempts there, had a perfect herb and cheese omelette. Aren't I a clever little student...

I got it from 'grub on a grant'. 2 eggs, seasoning, beat, add to hot pan, fold - hey presto. One omlette I just added low fat cheese in mine

You would not believe how long it took me to relearn the secret to that is a hot pan! I used to torch my eggs because I was in a hurry as a teen, and always made perfect cheese and egg scrambles...never a problem with the pan. As I got older, and could slow down a bit, I turned down the flame. Its taken me years to realize slow cooking eggs causes them to stick to the pan = more scrubbing. Hubby just came across that tidbit in a cooking book. Congratulations on your omlette
