I make this quite often and everyone seems to like it. Take a good sized chicken breast and cut a slit in the middle to make a pocket, stuff with a good dollop of Boursin cheese(you can use the garlic or the mixed herb one) wrap in palmer ham and then fry until golden brown, you can use streaky bacon if you prefer, remove from pan and bake in the oven for aprox 50mins, I normaly serve it with roasted mixed veg and a good spoon full of redcurrant jelly on the side.Yummy!!!!!
