I have,nt done one of these for years, I normaly boil if first then take the rind off score it and put brown sugar and cloves on it, but I just wondered if anyone did something different.

I always find its a good idea to first bring it to the boil in water, then tip the water and scum out, then bring it back to the boil in Coca Cola. You can finiah off the last of the cooking in the oven.

It's lovely boiled in Coke, it stays very sweet and succulent

I soak mine and then bake it in a tent of foil in the oven. Half an hour before end of cooking, I take the rind off, score the fat into diamonds, put a clove in each diamond, cover with mustard and then pat demerara sugar all over. Put back in a very hot oven to caramelise. Delicious hot with bread sauce and then lots left over for cold meats over holiday season. That is if your oven doesn't give up the ghost!!!!
