MY favourite main meal. We have 6 muscovies in the freezer awaiting this! lol
OK here we go. Bucket cooking remember....
Muscovie duck breasts are big, so feed 2 people on one. If you have to get them from the supermarket, go for one breast for each person, maybe 2 if there AA sized. lol
Dry duck breasts, patting dry with kitchen roll. Rub on some salt. Place on a tray and bake at roasting temp in ya oven. About 20 - 30 minutes. Dont worry if theyre rare after this time, they get a cooking as well in the sauce.
Meanwhile the sauce In a sauce pan. One finely chopped onion, a table spoon or less of oil and pan fry until soft. Add half a pint of white wine. Add crushed pickled green peppercorns to this Add 2 tablespoons soya sauce Add a dash of Worchester as well. Boil down to reduce to about half.
Then add 2 table spoons of brandy and smell it.... lovely...
Add about half a pint of double cream or half fat creme fresh if you dont like it too heavy.
Remove the duck breasts from the oven. Slice into medallions (thick slices) Put these into the sauce that has now thickened. Place in casserole in oven for about 30 minutes.
Serve with roast spuddies Steamed broccoli

Can't wait to try this, but have tried and failed to get the pickled green peppers.
Is there anywhere in particular I should be shopping Mary, or is there a substitute ingredient please?
I wish I had 6 muscovies in the freezer too - yum!
