I haven't been to the supermarket for ages - can't face the crowds. So I've been eating through my freezer! This morning I had a dig through to see what I could find - and there was a sad little tuna steak lurking in a bag.
So, I looked through my fridge to see what I could eat with it - not a lot LOL. But there was a large organic tomato, half a lump of mozarella, an open jar of sundried tomato paste and two organic potatoes. LOL
So - I cut the potatoes lengthways into slices (skin on) and boiled them in a little salted water.
Meanwhile I heated a little olive oil in a small frying pan and sealed the tuna steak on both sides. Then added the chopped tomato and a couple of teaspoonsful of the sundried tomato paste, a few good grinds of pepper and a little salt. Oh yes, and a teaspoon of balsamic vinegar. I let the whole lot cook gently together with a lid on until the potatoes were ready and the tuna was cooked through, then took the lid off the pan and let the tomato sauce reduce a little to get rid of any watery-ness.
Put the slices of potato in a shallow bowl poured the tomato sauce over the the tuna on top. Topped this with slices of mozarella, a couple more grinds of pepper then under a hot grill until the mozarella was melted and browning a little.
Yum yum - eaten with a large glass of red wine........

Mmm, sounds good! Another one for me to try. I often find my better cooking attempts are recipes made up on the hoof, depending on what's left in the fridge and freezer.

LOL Pam - I've just been to Tesco and made a point of buying in the ingredients to make this again. I wonder if it'll be as nice as a "planned" meal!!

Sue, this sound fantastic! Ive never bought fresh tuna steaks before, but this sounds very inspiring. I might roast the potato chunks instead though..
FUnnily enough I was going to write a post on what to do wiht a tuna steak?

Fresh tuna is lovely, Mary - totally different to the stuff in the tin (although I like that too).
I boiled the potatoes with calories in mind - but it would be lovely with roast or sautee potatoes.

Mmmm that sounds so nice Sue! If I opened my fridge and saw that lot I would have had tuna and cheese on toast lol
