Last year I had a simple recipe for a christmas cake using a jar of mincemeat, it came from Bella magazine. It was dead easy and really nice. Unforetunately I've lost it has anyone else got it?

Don't know if its exactly the same but this is the one I use:
5 oz butter 5 oz soft brown sugar 2 eggs 8 oz self-raising flour 3 oz sultanas 1 lb mincemeat 1 oz flaked amonds (optional)
Place all ingredients except the flaked almonds in a large bowl and beat until well combined. Grease and line an 8" cake tin and fill with the mixture. Sprinkle the almonds on top if you're using them and bake at 325F for 1 1/2 - 2 hours until golden brown and firm to the touch.
There's also one in Delia Smith's Christmas which is very simillar but includes an extra egg, orange and lemon zest , chopped walnuts and mixed fruit instead of sultanas.

I've made the same recipe since I was at school, it's a Stork one, the mincemeat one sounds good i might give it a try

FOUND IT!! really weird, I thought I'd searched the cupboard where my recipe books are well, including shaking out all the books as I've a habit of tearing recipes out of magazines and shoving them in my cook books. Hey presto! all of a sudden it turns up in my favourite cook book. I'm sure I looked in that one. Must be losing my marbles. here it is. 8oz butter 5oz soft dark sugar 4lrg eggs beaten 10oz plain flour 1tsp cinnamon 8tblsp port or similar 1 400g jar mincemeat 1 200g tub glace cherries halved 12oz mixed dried fruit of your choice 4oz blanched almonds chopped and lightly toasted preheat oven 150c grease and line 8'' round tin. cream butter & sugar, gradually beat in eggs with a little of flour, sift in flour & cinnamon add 6tblsp of port and mix. stir in mincemeat cherries fruit & nuts. spoon into tin and bake for 1 hr 45 mins/2hrs, cool in tin. Prick all over and sprinkle on the remaining port wrap in foil.

Must make some christmas cake- Ive got my great gran's recipe, she used to make a load each year for everyone and its truely delicious! Need to find it out- though I think it uses 15 eggs!! (does make a around 6 cakes though!)
